
Cupcake Ingredients
1/4 Cup [1/2 stick] Butter, [Room Temp]
3/4 Cup Granulated Sugar
1/3 Cup [2 ounces] Unsweetened Chocolate, coarsely chopped, melted.
2 Large Eggs
1 Tsp Peppermint Extract
1/2 Cup Chocolate Milk [I used regular]
1 1/2 Cups A.P. Flour
1 Tsp Baking Soda
1/2 Cup [6oz] Mini Chocolate Chips
Cupcake Directions
- Cream together butter and sugar until light and fluffy [3-5 mins]. Beat melted chocolate into butter mixture. Add eggs, peppermint extract and milk. Beat until creamy.
- In a separate bowl, combine the flour and baking soda.
- Add the dry ingredients to the chocolate mixture and beat until well blended. With a rubber spatula, mix in the chocolate chips.
Frosting Ingredients
1 stick butter, room temperature
4 cups powdered sugar
1/4 cup milk
1/2 tsp vanilla extract
1.2 tsp peppermint extract
First time using the nut and party cups that I had originally seen on Cupcake Blog instead of the normal cupcake wrappers. I am totally in love with these holders, I am going to stock up and hella use them in place of the wrappers from now on.
On vacation from work this week, and hoping to bake up an insane amount of new recipes.

- Add sifted powdered sugar, milk, vanilla and peppermint extract. Alternate and beat well.
- Beat until well combined.

I've just made these are they are so yummy! Its my first attempt at something a bit more interesting than a basic cupcake. I'll definitely be making these again.
